You can use different type of potatoes with this recipe. I have used fingerlings cut in half and mini roasting potatoes and those worked well also. If using the mini roasting potatoes, poke them with a fork a couple of time to allow for the flavours to penetrate. This is so easy and very tasty.

This is a great way to enjoy corn on the cob. I opened the refrigerator door this morning and saw the cobs of corn sitting on top of a package of bacon and thought, mmmmm those two would definitely go good together and yup I was right. One of my favorite ways to slow roast tomatoes. These will keep a good month in the refrigerator; or, 6 months or more frozen. Great on top of grilled chicken or pork; on sandwiches, foccacia bread, bruschetta, or pizza. They are absolutely delicious. Great for that summer crop of tomatoes. I roast tomatoes for soup; but, these are completely different. They are absolutely addictive.
