"A friend of mine made these for us for dinner a while back...she finally gave me the recipe...these make a perfect side dish...and are company worthy...she didn't really give me any measurement except for the amount of potatoes."
Preheat oven to 400°F.
Melt butter and pour into a 9X13 inch pan and spread evenly across the bottom.
Generously sprinkle Parmesan cheese and lightly sprinkle other seasonings all over the butter.
Place potato halves face down on the butter and seasonings.
Place in preheated oven and bake for 40 to 45 minutes.
Cool for at least a FULL 5 minutes before removing from the pan, otherwise the Parmesan crust won't stick to the potato.
Serve on a plate with a side of sour cream for dipping.

Oh my...these are absolutely delicious!! I used a yellow fleshed (waxy) potato which was crispy on the outside and very creamy on the inside. Pure heaven! I used Grana Padano in lieu of the Parmesan. Baked these before I broiled the short ribs so they sat in the pan on the stove top for a good 10 minutes...so the cheese really stuck to the potatoes. The family made short order of these beauties! Oh my these are so delicious!!!! I made them to serve with chicken breast for our work lunches and we both couldn't get enough. To my best of 2017 this goes. This will be made often!!!
