Place potato halves face down on the butter and seasonings.

I made this last night for a late snack for DD and myself. I followed the recipe as written, although I think I should have left my potatoes in the oven a few minutes longer, as the parmesan had not melted and cooked properly! Next time I might cut the butter just a little, but we did really love these little beauties. I did ask DH did he want any but he declined ~ only to come back 30 minutes later looking for them, but DD and myself had demolished the lot. He was still complaining this morning that he had missed them.... ahh well, maybe next time...lol I served with sour cream mixed with an aged balsamic....OHH YUMMY!

These are a delicious side that's super easy to make. Great with sour cream or ranch or even ketchup which is how DH like them.
