"When I can get to my grill during Spring or Summer I grill vegetables in a grill basket with the ingredients listed which I've developed. It beats plain grilled veggies as these flavors are pumped-up, delicious, healthy and makes a great accompaniment to grilled meats or fish. If you don't have a grill basket, the veggies can be skewered instead (I would recommend buying a grill basket because it makes it so much easier). Note that nutritional value listed isn't correct because it is counting full measure of marinate ingredients. The marinate ingredients are mostly cooked off during grilling. NOTE: The French salad dressing is not included in nutritional facts"

Step by Step Method

Step 1

Chop vegetables by trying to keep all within the same uniform size. Place chopped vegetables in a large ziplock bag (the larger bags found in Cosco or BJ's is best).

Step 2

In a medium bowl, mix all remaining ingredients. Remove about 1/2 cup into a small bowl, reserve, cover with plastic wrap and place in refrigerator (this 1/2 cup of reserved dressing is optional). Pour remaining dressing mixture into bag and massage vegetables to distribute marinade mixture evenly. Make sure each vegetables piece is thoroughly covered with dressing mixture.

Step 3

Seal bag and try to push air out. Place bag in a clean bowl. Refrigerate and marinate for 4 - 8 hours.

Step 4

Prepare and heat up grill.

Step 5

Remove veggie bag from refrigerator. Place a large sieve over a bowl big enough to hold sieve. Pour veggies into sieve, letting the sauce drip into bowl.

Step 6

Place a grill basket over hot grill.

Step 7

Pour vegetables into grill basket. Every so often with long tongs turn vegetables to cook evenly. When turning vegetables, spoon in marinate sauce into vegetables until all is used up.

Step 8

Grill for approximately 20 - 30 minutes until vegetables are cooked to desired doneness. They should be tender with slight crisp and some pieces slightly charred (being careful not to over-char).

Step 9

Serve hot. If using reserved sauce, pour over veggies and toss to distribute evenly or serve plain without added sauce.

Tips

  • Grill basket or skewers

I halved the recipe for 3 people and still have leftovers. I really liked the grilling method - although my basket let some veggies slip through (note to self - buy a smaller grid grill basket). The flavor was really good with the French dressing addition. I chose not to baste my veggies with it and it was perfect for us. Thank you!

I had lots of zukes from my garden so made this to have with grilled chicken. I used Kraft Zesty Italian and it was delicious!

We really liked these vegetables, even though I cut the recipe in half. Very good and enjoyed by all. Thanks for sharing!

I love grilled vegetables and was happy to try these out. Love the vegetables, but the marinade seemed to over power the flavor of the vegetables. They turned out overly sweet. I think small children might enjoy the sweetness of this recipe, and in that case, I recommend you try it out. But for me, I prefer to be able to taste the vegetables a bit more. I'll continue to grill veggies, since they are one of my favorite things to grill. Thanks for sharing!

We love grilled vegetables, so much so have two grill baskets, a third added a few weeks back. I used my homemade French dressing and the Wishbone Italian, other than not using the liquid smoke I followed through as posted for one awesome vegetable grill! Next time around have pots of peppers ready to go! Adding to my cookbook! July 2019 finally got back to making this using peppers from my garden using garden grown peppers, I was right on track with that! Herbs being near the bbq area, just couldn't resist finishing off with snippets of chives and parsley. This is a great combination for summer grills.

Very good! My daughter and her boyfriend were here for supper and I made these to go with T-bones on the grill. I didn't add but a bit of cayenne for the pepper, because my tummy has been bothering me. They were delicious anyway!
