Step 1

Preheat oven to 400°F.

Step 2

Bake potatoes for 1 hour or until tender. (I have zapped them in the microwave, but the oven is best). Let cool slightly.

Step 3

Cut each potato in half lengthwise; scoop out pulp into a large bowl, leaving a 1/4-inch-thick shell.

Step 4

Mash pulp with a potato masher. Add milk and next 5 ingredients; stir well.

Step 5

Spoon potato mixture into shells.

Step 6

Place on a baking sheet; bake for 15 minutes or until thoroughly heated.

Step 7

Sprinkle each potato half with 1 1/2 teaspoons green onions; top evenly with crumbled bacon.

First time I've ever used cream cheese or feta in a baked potato! Now I am wondering why I haven't done this before!! Delicious! Mine aren't pretty because I mixed the bacon and green onions into the potato mixture, but they sure tasted great! This is a keeper!

First off I have to say I never thought to add feta to potatoes. Absolutely brilliant! I made this for two with the following adjustments. Two potatoes weighing a total of 1/2 pound (250 grams), 1 1/2 tablespoons milk, 1 1/2 tablespoons feta, 1/2 ounce of cream cheese, 1 teaspoon of fresh oregano, 1/2 ounce of bacon and a whole green onion chopped. Baked potatoes don’t get better than this. I will make this often and think it would be great to serve to company.

Daily Inspiration

Loved these stuffed potatoes; especially the feta. I love to add feta cheese to mashed potatoes and adding feta to baked potatoes makes it twice as nice. Definitely a recipe I'll make again.

These are delicious, and have been a favorite of mine for a while now. Feta goes so well with potatoes, and the fresh oregano gives them a great flavor. They definitely do not taste like a low fat version of a high fat dish. I broil these the last 5 minutes to crisp them up.
