Wonderful easy recipe on a busy day! Did not have the Meyer Lemon olive oil so upped the lemon. I do not microwave my food, so steamed the broccoli to our taste and then added the ingredients and let it sit in the hot pan. Sprinkled it with grated Asiago. Wonderful noodle bowl with just the right amount of heat for us! Did use cooked chicken for the seitan (as I can not get it here), and used brown rice noodles. This is a delightful change of pace! We were very happy! And it is fast and easy to put together on a busy day. And it is very versatile. As it is just two of us, we had plan aheads (leftovers) and made a creamy pasta sauce with the addition of caramelized onions, garlic, Italian herbs, a good splash of whipping cream, cayenne and a good grating of Grana Padano.
