"My granddaughter Anna (10) made these for dinner. They are like Toad in the Hole. This is great with a light salad. And I thought I would post her recipe here for you to enjoy too! The recipe says it makes 12 popovers. But that is relative to the size of the muffin tins. NOTE: Apple Chicken Sausages not included in the Nutritional Facts"

Step by Step Method

Step 1

Preheat oven to 425F.

Step 2

Sift the flour and salt into a bowl and make a hole in the centre.

Step 3

Crack the eggs and add them, one at a time.

Step 4

Using a whisk, beat the milk into the eggs and flour until you have a smooth batter, with no lumps.

Step 5

Stir in the chives and mustard if using.

Step 6

Add 1 tsp of oil to each muffin cup and heat the tray in the oven for 3 minutes

Step 7

Take the hot tray out of the oven and add some sausage to each each hole.

Step 8

Put the tray back into the oven for 4 minutes.

Step 9

Remove tray and half-fill each hole with batter.

Step 10

Put it back in the oven and cook for 18-20 minutes.

Step 11

Meanwhile, heat the oil in the saucepan and stir in the brown sugar, onion and vinegar.

Step 12

Gently cook the onion for 10 minutes until soft and browned.

Step 13

Spoon the onion out of the pan onto a plate and melt the butter in the same pan.

Step 14

Add the flour and stir for 30 seconds, or until browned.

Step 15

Add the stock and bring it to a boil.

Step 16

Boil for 1 minute, and then add the onion.

Step 17

Lower the heat and the simmer for 10 minutes or until thickened.

What a treat these are! They're a whole lot of fun and made for a wonderful Monday night dinner served along with salad as suggested. They'd be great for breakfast/lunch too. We used Sweet Apple Chicken sausages and made the gravy as noted, except ran the gravy through the blender to hide the onions (my son claims to hate them). So good with the gravy-YUM! However, mine didn’t raise very much, but I think it’s because my tins weren’t hot enough. Thank you, Luvcookn, for sharing. Made it for Billboard and What's on the Menu tag games.
