"I'm trying to up the protein in my diet, so we have eggs a lot. Here's another take on scrambled eggs."

Step 1

With an immersion blender, combine eggs and water until smooth and pale yellow.

Step 2

Heat a non-stick skillet to medium. Add butter if using or spray!

Step 3

Pour in eggs, gently stir until bottom is cooked but not browned. Tops will look shiny.

Step 4

Sprinkle cheese on top. Turn off heat. Cover pan. Let sit for a couple minutes until cheese is melted.

Step 5

Sprinkle with salt, pepper and hot sauce to serve.

We enjoyed this for breakfast a couple of days ago before we headed out of town for a big family Christmas get together. Added plenty of hot sauce and also had a side of spicy conecuh sausage. Perfection. Made for your win in Football pool.

Perfect eggs for a quick breakfast morn. I had never ran my eggs in a blender, but they came out with a perfect consistency. The hot sauce and cheddar just brought all together. Love this type of food. Thank you Linky for sharing.

Loved the eggs prepared this way. I used Franks Hot Stinging Siraccha Honey Garlic Sauce. It was incredible in the scrambled eggs. Made for Down Home Cooking tag game.

Very quick and easy, and tasty! We had breakfast for dinner and this was perfect. I skipped the hot sauce, though.
