Step by Step Method

Step 1

In a bowl mix soy sauce, veggie broth, rice vinegar, sugar, ginger, sesame oil and chili flakes.

Step 2

Add 1/2 of the mix to the grated seitan.

Step 3

Prepare rice noodles according to package directions.

Step 4

While the noodles are soaking, heat a wok or skillet over high heat.

Step 5

Add olive oil, garlic, cabbage, carrots, and green onions, stir fry for 4 to 5 minutes.

Step 6

Add the drained noodles plus the rest of the sauce mixture into the wok then stir fry 2-3 minutes, then add the marinated seitan and cook until warm.

Step 7

Serve with toasted sesame seeds on top.

Wonderful noodle bowl with just the right amount of heat for us! Did use cooked chicken for the seitan (as I can not get it here), and used brown rice noodles. Prepped everything in the afternoon which made cooking fast and easy. We thoroughly enjoy noodle bowls and this one surely did not disappoint! Thank you Pia for sharing another of your keepers!
