With the addition of panko breadcrumbs for added crunch, this is so unbelievably easy, throw a handful of simple ingredients together – olive oil, garlic, parmesan cheese, breadcrumbs and sprinkle over some parsley and that’s it. A simple recipe for your dinner table! Or enjoy them as a snack!"

Step by Step Method

Step 1

Preheat oven to 200°C | 400°F and spray a baking sheet with cooking oil spray.

Step 2

Arrange carrots on a sheet.

Step 3

Pour over the olive oil, then add the garlic, parmesan, bread crumbs, salt and pepper.

Step 4

Toss all ingredients together to completely coat the carrots.

Step 5

Spread out and bake for 20 – 25 minutes, or until tender.

Step 6

Toss with a spatula halfway through.

Step 7

Remove from oven and serve immediately.

Step 8

Top with fresh parsley if desired.

Interesting and good carrots -- we only used about half the recipe but made as directed. A nice change which we enjoyed. Thanks for sharing!

I went to half this recipe, but forgot to half the topping. But it was great! I'd do it this way again.

TeresaS just loved it...I'm putting this on my Best of 2020 list...the hubby who isn't a cooked carrot lover...raved about how good this tasted...(I think he thought they were sweet potatoes) ...made for "Billboard" tag game...

These are marvelous in taste and so quick and easy to make especially for a weeknight. Like dienia, I used a tad more cheese, but the amount of cheese noted is fine too! The ingredients are a refreshing change from sugary recipes. The panko and parmesan provide a crunchy coating to tender centers. Love it! Thank you Patti for sharing. Made it for Billboard Tag.
