Step by Step Method

Step 1

Heat oil in large skillet over medium heat. Add chopped onion and cook until tender stirring occasionally.

Step 2

Stir in remaining ingredients and heat until boiling. Reduce heat, cover skillet with lid and simmer 10 minutes. Uncover and simmer about 5 minutes longer until vegetables are tender.

This was a fun recipe to try. I liked the addition of the coconut milk. The next time, I think I will add a bunch more clove, because I think it would be good that way. My hubby and I disagree on that kind of thing. He added brown sugar to the top of his and he said he liked it that way. I think the cloves would be just as good if you don't want the extra sugar. I was happy to see that it was a good for us dish and quick to make. We had some organic salmon with it. I made this for Pick Me 2019. This was good.

This is a wonderful delicately flavoured veggie dish that went well with the other spicy goodies I made. I used a delicata squash which was lovely. Once everything is prepped, it goes quickly. A sure keeper!
