Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Spray a 9 x 5 inch loaf pan with cooking spray and set aside.

Step 3

In a large bowl, combine flour, oats, sugar, baking powder, cinnamon, salt and nutmeg.

Step 4

Add coconut and nuts; mix well.

Step 5

In a medium bowl, whisk together evaporated milk, applesauce,eggs, oil and vanilla.

Step 6

Stir in apples and carrots.

Step 7

Add wet ingredients to dry ingredients.

Step 8

Mix just until dry ingredients are moistened.

Step 9

Pour batter into pan; spread evenly.

Step 10

Bake for 55 - 60 minutes or until a wooden pick inserted in center of loaf comes out clean.

Step 11

Cool for 10 minutes in pan.

Step 12

Remove bread from pan and let cool completely on a wire rack.

Step 13

Cover with plastic wrap and store in refrigerator.

As Dee said, this is a great breakfast bread. Loved it toasted and what's better it's not packed with calories as some others can be. Followed all as directed except left out the nuts and flouring the oiled pan. I would certainly make this again. Thank you, Luv, for sharing.

Very nice bread. Followed the recipe to a T and it came out perfect. I think I will add raisins next time, since I love that combination.❤
