"These are great tasting meatballs I serve over cooked rice or Chinese noodles."
In a small bowl mix together the water and ground flax seeds; set aside and let sit for 15 minutes.
Mix together the ground pork, onion powder, garlic powder, ground ginger, salt, pepper and flax seed and water mixture.
Form into 1 inch meatballs and place on a rimmed baking sheet.
Place in a preheated 350 degree Fahrenheit oven and cook for 15 minutes.
In the meantime, melt the coconut oil in a skillet over medium-high heat, add onion and bell pepper and cook until they start to slightly brown on the edges.
Remove the meatballs from the oven and place in a 14 inch X 10 inch casserole dish; pour the cooked onion and pepper over the meatballs and set aside.
Whisk together the water and corn starch; stir in the remaining sauce ingredients and pour over the meatballs, onion and pepper.
Cover and cook in a 350 degree Fahrenheit oven for 45 minutes; remove cover and cook for another 15 minutes.

I made half recipe, made the meatballs bigger and did not use the red pepper (can't eat). I did find the cook time at our altitude made them a wee bit dry, but will change that next time. We enjoyed these over rice with Asian beans. Thanks for sharing Bea! Made for Billboard Recipe Tag.
As I made these meatballs I had to wonder why over the years our ground pork was basically used for homemade sausage, cabbage rolls/lazy cabbage roll casseroles! Made half a recipe using freshly ground pork, loved these meatballs. Next time around will be making the full recipe ... looking forward to serving to family and friends! As I see it a great weekend meal!
