Use up the leftover cranberries, freeze the loaf for later. I often make half of this into a loaf and half into small muffins. I have also successfully used dried cranberries in this loaf, but prefer fresh or frozen.

I call this "Cheater" eggs in purgatory because I use leftover Italian pasta meat sauce for this instead of making it from scratch. I make this often when I have guests over for breakfast after a night of too much fun, lol. It is quick and easy to put together and always enjoyed by all. I usually heat the pasta sauce in the microwave oven for a quick start.
