"I call this "Cheater" eggs in purgatory because I use leftover Italian pasta meat sauce for this instead of making it from scratch. I make this often when I have guests over for breakfast after a night of too much fun, lol. It is quick and easy to put together and always enjoyed by all. I usually heat the pasta sauce in the microwave oven for a quick start."

I had some leftover pasta sauce to use up so this recipe came to mind. I cut it down to feed two. We loved it!

WhatamIgonnaeatnext?

I halved this recipe for two servings. It was good. I had to buy my sauce, so I added crumbled up fried bacon and shredded cheese into it. I didn't have any other meat for it. It was a good breakfast. We had it with toast. I never would have thought to do anything like this on my own
