Impossible Quiche - Bisquick

Step by Step Method

Step 1

Preheat oven to 400°F.

Step 2

Lightly grease an 8 inch square pan or a 9 inch pie plate.

Step 3

Cook bacon until crisp; drain on paper towels; discard grease.

Step 4

Sprinkle bacon, cheese and onion into pan.

Step 5

Blend eggs, Bisquick, milk, pepper, dry mustard, dill weed and salt together until smooth.

Step 6

Pour mixture over top of bacon mixture.

Step 7

Bake until top is golden brown, and knife inserted comes out clean, about 30 minutes.

Step 8

Let stand 5 minutes before serving.

This was a hit for our Sunday dinner! I used some more bacon and dill because both had to be used up, and I used my home made gluten free "bisquick" mix. I think next time I'll follow the suggestion to mix all ingredients instead of sprinkling bacon and cheese into the pan before pouring. I had a nice crust in some places, in others not - but that might also be a gluten free issue LOL Anyway it was delicious, and I'll make it again, using it as a base for veggie quiche, too. Easy and delicious. I used the square pan option, and since we don't care much for dill, added a tsp. of dried chives. Made for a nice, light dinner, served with a green salad.

This was a nice quiche. I made it as directed up to a point. I accidentally grabbed an 8-inch pie plate....which was too small. So then I dumped everything into a 9 1/2-inch pie it ended up mixing all ingredients together. But it worked really well and we really enjoyed it. Thanks for sharing, Teresa. I love the idea of an impossible was so easy to make and the Jiffy baking mix that I used instead of Bisquick band did it's job of sinking to the bottom and giving it almost a crust. I did follow the other reviewer's suggestion and mixed everything together before pouring it into the pan, and it did keep things from all settling at the bottom. i think the only change I would make would be to up the spices...more onion, more dill and more pepper (I left out the dry mustard because I ran out). The flavor was a bit bland given the recipe amounts. But with a heavy hand on the spices, this would be a simple meal that would work with whatever you had in the house for mix-ins and cheese.

This was one of the best "impossible" recipes I've tried. The texture was very custard like, more like a true quiche which made it a hit with my diners. My only suggestion for improvement would be to stir all of the step 4 ingredients into the batter. As directed they sit at the bottom. I did add 1 1/2 spiral cut zucchini and a bit more onion. I will save this recipe for those clean out the veggie bin days. I really think almost anything would be good in this. Thank you for sharing this keeper of a recipe!
