It's that time of day again. When the clock turns to a certain time and seems to hold on hungry. Coffee time. Or dessert time. Or anytime, really, and that special treat just happens to be the best when fresh out of the oven, onto a plate and the complimentary ice cream melts along the edges of this apricot cobbler dessert. Yes.

What's not to love here? 15 minute prep time, 35 minute bake time and we are good to go. Speaking of go, the best apricot flavors happen when they are picked when well ripe. And of course, no apricot cobbler is complete without a rich and creamy ice cream on the side.

Fresh Apricot Cobbler

Ingredients

1/2 cup water
1/4 cup granulated sugar
2 tablespoons granulated sugar
1 1/2 teaspoon cornstarch
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3 cups chopped apricots (cut in 1/4th)
1 1/2 teaspoons unsalted butter
1/4 teaspoon salt
*FOR TOPPING*
1 cup all-purpose flour
2 tablespoons granulated sugar
1 tablespoon granulated sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons unsalted butter
3/4 cup milk


Instructions

  1. Preheat the oven to 400 F.
  2. Bring water, sugar, cornstarch, cinnamon, nutmeg and salt to a boil-stir until thickened, about 1-2 minutes.
  3. Reduce heat to medium and add the apricots and butter. Simmer for 5 minutes. Transfer the mixture to an 8x8 or 9x9 square baking dish ( pyrex).
  4. Make topping: whisk together the the flour, 2 Tb sugar, baking powder and salt.Cut in the butter and mix with fingers until the mixture looks like coarse crumbs.
  5. Stir in the milk until just moistened.
  6. Spoon the topping over the apricot mixture and sprinkle with the 1 Tb. sugar.
  7. Bake for 25-35 minutes or until golden brown.
