"Use up the leftover cranberries, freeze the loaf for later. I often make half of this into a loaf and half into small muffins. I have also successfully used dried cranberries in this loaf, but prefer fresh or frozen."

Step by Step Method

Step 1

Preheat the oven to 350F degrees.

Step 2

Grease an 8 1/2 by 4 1/2 inch loaf pan.

Step 3

Mix sugar and butter in a medium mixing bowl until completely blended.

Step 4

Add banana, milk and eggs, mixing well

Step 5

Add dry ingredients, mixing just until moist.

Step 6

Stir in nuts and cranberries.

Step 7

Spread batter evenly in the loaf pan.

Step 8

Bake for 1 hour and 10 minutes, or until a toothpick inserted in the centre of the bread comes out clean.

Step 9

Remove from pan, cool on rack.

We had this last night. I cooked it about twenty minutes longer than the recipe said to. It turned out very good. Moist and cake like. I'm on a banana kick and I've had this recipe saved forever on the former site, so I finally made it. The only other thing I did is to mix some flour in with the frozen cranberries so they wouldn't settle to the bottom of the pan.

I need not look any further for a good cranberry bread! This came out perfect in taste and texture and we loved it! I made a spread of cream cheese, milk, walnuts and vanilla to have with it. Wowsers!

Delicious! I made one regular size loaf and one mini loaf from this recipe! I did chop the cranberries (frozen) in the food processor. Very good bread!

Very moist banana bread. I baked mine in a fluted cake pan. Loved the contrast of the sweet and tart. I might add some vanilla extract next time.
