Step by Step Method

Step 1

Pre-heat oven to 450f

Step 2

Place tomatoes, cut side up on a baking sheet

Step 3

Top with parmesan, oregano, salt and pepper. Drizzle with olive oil

Step 4

Bake for approximately 15 minutes or until the tomatoes are heated through and the cheese is golden

My potted tomato plant is thriving, and has lots of tomatoes ready to use. I remembered this recipe and made some to accompany one of our favorites; cooked spaghetti sauteed with EVOO, crushed red peppers, garlic, lemon juice and Parm cheese. They were excellent, and were a great side!
