This looks too pretty to eat, but don't be fooled. It's delicious! This blend of peaches and raspberries is delightful on biscuits or scones. Even drizzled over vanilla ice cream. Yields 7-8 1/2 pints. Serving size reflects 1 pint

This is awesome with fresh peaches, but using sliced canned peaches will work also. If using fresh whipped cream, try using just a very small amount of almond extract instead of the vanilla...yum!

When the peaches are fresh and juicy in the summer i made peach pies for the freezer, so nice to have in the middle of winter. I use splenda in my pies , a little better for diabetic.
A perfect light dessert. A sweet and spicy marinade and grilled. These can be served as is with a little whipped topping or mascarpone cheese and toasted pecans; or my favorite, over vanilla ice cream. Also, try them over angle food or pound cake. And, these are equally good chilled or served warm. Fresh peaches are a must for this recipe. You can also use whole peach halves if you prefer.

I use very ripe peaches for this, ones that seem just past their prime for eating out of hand. You can make the mixer up in advance, then just mix it with slightly softened ice cream in the blender.

This is a very simple chutney. It is lovely with chicken, pork, as an addition to an Indian meal or an appetizer tray. The flavours mature if left to sit in fridge for a few days.
