One of my favorite recipes. And, it is actually pretty easy to make. Thin pounded chicken breasts stuffed with spinach, olives, cheeses, and shallots; rolled up and served with a rich sun dried and diced tomato, and olive sauce. I like to serve this with pasta tossed with garlic and fresh herbs, salad and some roasted squash.

This is my new favorite pasta recipe. I've made it about 10 times the last few months because it's so easy and so good. It's adapted from a grocery store recipe. It's great even without the chicken. You can add onion to this also by sauteing some in the olive oil before adding the tomatoes. Please use all fresh ingredients for the best results.
A delicious rosemary and orange flavoured roast chicken that is a big hit with family and friends. Recipe works equally well with chicken pieces. As with the whole chicken baking time will vary as to the size of the chicken, with the pieces needing less baking time. This one will get you oohs and aahs before they have that first bite!

This is my daughter's recipe. It is a very easy to put together. As a matter of fact I sometimes marinate the chicken and cook it off 2 days before making the sauce. So all that is left to do is making the sauce and cooking rice. As they say...easy peasy!
This is a breading recipe I concocted a while back. It is similar to “Shake ‘n’ Bake” style chicken but much better. This tastes just as good as deep-fried, if not better. If you do not use coconut flour or have sour cream on hand, this is what I have done with great results. I used cream cheese and no flour. Just whisked in the cheese to the sauce in the pan.
