"A delicious rosemary and orange flavoured roast chicken that is a big hit with family and friends. Recipe works equally well with chicken pieces. As with the whole chicken baking time will vary as to the size of the chicken, with the pieces needing less baking time. This one will get you oohs and aahs before they have that first bite!"

Step 1

Wash chicken, pat dry.

Step 2

Brush chicken with melted butter,season both inside and out with salt and pepper and rosemary, placing one clove garlic inside chicken.

Step 3

Place in roaster with the orange juice, quartered orange, and remaining clove of garlic.

Step 4

Roast uncovered in 350 oven until chicken is well browned, fork tender, and juices run clear when pierced with a fork about (1 1/2 to 2 hours) Baste several times, you may need to add a little more juice or water.

Step 5

Make glaze by mixing marmalade and dry rosemary, brush onto chicken and bake for another 10 minutes.

My chicken was so juicy and tender on the inside and the outside was packed with the flavors of orange and rosemary, which is a great combination any time. The skin crisped up nicely. I even put the spices on the inside for added flavor. We give this thumbs up all over the place!

This is some yummy chickie! My lil guy gobbled up all I put on his plate and wanted seconds. My hubby and I both loved it too. The spices were great with the orange flavor and it made a delicious main course. I will make this one again and again.

Now that it's a little cooler in Florida I have had the priveilege of actually using my oven. I have wanted to try this chicken for a long time so decided now would be good. The meat was so juicy and had a great flavor from the herbs and other ingredients. I served it when my daughter and son in law came over so they could have some with us. We give it 4 thumbs up, so that makes 20 stars!

Great combination of flavours!! Left the peel on the oranges like Derf and squeezed the orange juice over the chicken at the table. Absolutely awesome! UPDATE 1/26/19: I have been having toast and marmalade for brekky in the mornings, and remembered this delicious recipe. So pulled out an organic chicken and whipped this up for dinner.
