Step by Step Method

Step 1

Preheat oven to 350 degrees F (oven rack to lowest position).

Step 2

In a bowl combine melted butter with fresh minced garlic, 1 teaspoon garlic powder and seasoned salt.

Step 3

In another bowl combine the dry breadcrumbs with 1/2 cup finely grated cheddar cheese, Parmesan cheese 1 teaspoon garlic powder, coarse ground black pepper and cayenne

Step 4

Dip chicken in butter mixture; then in crumb mixture pressing down with fingers to adhere the coating to the chicken.

Step 5

Place coated chicken on the rack.

Step 6

Bake uncovered for 35-45 minutes or until cooked through, larger breasts may take more time

Step 7

Top with shredded cheddar or mozzarella the last 5 minutes of cooking (this is only optional).

This was just fantastic. Definitely a make again! As many may agree, I dislike when someone doesn't make the dish as stated and gives a poor review, but I like reading about the successes with any substitutions, as we all face challenges in our pantries sometimes. In my case, I was totally out of garlic powder (used an added generous amount of more jarred minced garlic) and had no cheddar (used our grated fresh parmesan and found some fresh, spicy Bothwell brand Habanero in my cheese stash). Because of the heavy spice of the cheese on hand, I skipped the Cayenne. Baked 4 good sized boneless/skinless chicken breasts in a buttered 9 x 12 pyrex glass dish for 40-45 minutes (no turning or covering) and it was a massive hit with the family. Next time I will be sure to have all the ingredients on hand, but I admit I was in a rush using what I had on hand and it was still a big winner with the method and most of the ingredients. Crunchy, moist and just delicious. Served with oven roasted baby potatoes and roasted asparagus. This is certainly a keeper!
