The olives are a nice, salty addition to this dish. It was a new combo for me and I really like it! We had a friend over with a nut allergy, so I omitted the almonds.

A perfect weeknight meal... FAST and easy to make. I did add some onion, as I had some sliced up that needed to be used -- and I used sliced baby cremini mushrooms instead of canned ones (also had some that needed to be used). We really enjoyed this chicken -- it tastes a LOT like the pineapple chicken at our local Chinese restaurant, but was way cheaper to fix at home and actually took less time than ordering take out. I only had yellow bell peppers, so that's what I used (the green would have been prettier, to add more color, but it tasted good with the yellow), and I used fresh cut pineapple instead of canned because I had it on hand and it needed to be used. I will definitely make this again.
