"This recipe for American Flag Frushi is a delightful twist on traditional sushi, adapted from the Dinner at the Zoo blog. It features a rectangular pan filled with sticky rice that is sweetened with coconut milk and sugar. The top left corner of the pan is adorned with fresh blueberries, representing the blue field of the American flag, while sliced strawberries are pressed into the rice to create the iconic red and white stripes. The frushi is then chilled until set, allowing for easy slicing into individual servings. NOTE: I used my InstantPot/Pressure Cooker to simplify making the rice since I had a million things going on in the kitchen. You can make on the stovetop by following the directions at Dinner at the Zoo, just be sure to double the ingredients so you have enough rice to fill a rectangular pan to make the flag. You can use more or less fruit (I listed when I used when I made my flag). Cook time does NOT include chill time. Serving size depends on how much guests scoop out at a party."

Step by Step Method

Step 1

In an Instant Pot or similar pressure cooker, combine the calrose rice, water, and salt. You may rinse and dry before cooking, if you prefer. I did not rinse so it would be extra sticky.

Step 2

Close the lid and set the pressure cooker to cook for 5 minutes.

Step 3

Once the cooking time is complete, allow the pressure to release naturally for 20 minutes.

Step 4

Open the lid and check that the rice is cooked and sticky.

Step 5

Add the coconut milk and granulated sugar to the rice. Stir well to incorporate the sweetener.

Step 6

Prepare a rectangular pan by greasing or lining it with parchment paper.

Step 7

Evenly press the sweetened rice mixture into the rectangular pan, making sure to spread it out uniformly.

Step 8

Gently press the blueberries into a rectangle in the top left corner of the pan to create the blue part of the American flag.

Step 9

Next, gently press the sliced strawberries into the rice, creating stripes. Leave space between each strawberry stripe to represent the white stripes of the American flag.

Step 10

Once all the fruit is arranged, refrigerate the frushi for at least 30 minutes to allow it to set.

Step 11

Two choices for serving: 1) Once chilled and set, remove the frushi from the pan and slice it into individual servings. 2) Let guests scoop out their desired portion with a serving spoon.
