"A spiced muffin made with quick oats and buttermilk. I make these to use up buttermilk in the refrigerator... it seems like there is always about a cup that needs to be used. My kids like these because they're simple, and are a nice grab-and-go breakfast for busy mornings."

Step by Step Method
Step 1
Preheat the oven to 375° Fahrenheit.
Step 2
In a medium bowl, stir together the quick cooking oats and buttermilk until combined, then let soak for 10 minutes; while the oats are soaking, line 12 muffin tins with liners.
Step 3
Stir eggs, brown sugar, vanilla, and vegetable oil into the oatmeal mixture.
Step 4
Add the dry ingredients (flour, baking powder, baking soda, salt and all of the spices) into the oatmeal mixture and stir until just combined. Do not overmix.
Step 5
Fill the muffin tins about 3/4th of the way full, and bake for 15-20 minutes (or until a toothpick inserted into the center of the muffin comes out clean).
