Polynesian Rice in the Instant Pot

"You can adjust the amount of pineapple, mango, and other ingredients according to your taste preferences. If you prefer a sweeter flavor, you can also add a drizzle of honey or a sprinkle of coconut flakes to the rice before serving. If I have time, I like to use fresh pineapple and serve the rice in the hollowed out pineapple shell (see photo). You can also add all of the ingredients into the pressure cooker and cook them (instead of adding in the fruit and veggies after the rice cooks), if you want a mellower flavor."

Step by Step Method

Step 1

Rinse the rice under cold water until the water runs clear. Drain well.

Step 2

Place the rinsed rice into the Instant Pot insert. Add water and a pinch of salt. Stir to combine.

Step 3

Close the lid of the Instant Pot and ensure the valve is set to the sealing position.

Step 4

Select the "Manual" or "Pressure Cook" setting and set the cooking time to 4 minutes on high pressure.

Step 5

Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release to release any remaining pressure.

Step 6

Open the Instant Pot and fluff the rice with a fork.

Step 7

Add the pineapple chunks, diced mango, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt (to taste -- make sure you taste to see if it needs salt) to the cooked rice. Stir gently to combine.

Step 8

Close the Instant Pot lid and let the rice sit for 10 minutes to allow the flavors to meld together.

Step 9

After 10 minutes, open the Instant Pot and give the rice a final stir.
