"This recipe uses almond flour in place of breadcrumbs for the coating, to make it okay for gluten-free and carb conscious eaters. You can substitute breadcrumbs for the almond flour, if you prefer. You can warm up the marinara sauce, if you're fancier than I am."

Step by Step Method

Step 1

Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Step 2

Wash the zucchini and cut them into long, thin strips resembling fries. Remove any excess moisture by patting them dry with a paper towel.

Step 3

In a shallow bowl, combine the almond flour, Italian seasoning, garlic powder, paprika, and salt. Mix well.

Step 4

In another bowl, beat the eggs.

Step 5

Dip each zucchini strip into the beaten eggs, ensuring it's fully coated, then transfer it to the almond flour mixture. Coat the zucchini strip evenly with the mixture, pressing gently to adhere the coating.

Step 6

Place the coated zucchini strips in a single layer in the preheated air fryer basket. You may need to cook them in batches depending on the size of your air fryer.

Step 7

Cook the zucchini fries in the air fryer for 10-12 minutes, flipping them halfway through, until they turn golden brown and crispy.

Step 8

Once cooked, remove the zucchini fries from the air fryer and let them cool for a few minutes. Sprinkle with grated Parmesan cheese. Serve them with a jarred marinara sauce for dipping.

I used the almond flour and it was a bit hard to keep the coating on the zucchini...we did enjoy the nutty flavor that the flour created...I served them with pizza sauce...made for "Billboard" tag game...

these worked out very well for us -- we skipped the marinara sauce and did add the Parmesan. I also used the bread crumbs option. Thanks for sharing!
