Step by Step Method

Step 1

Heat oil in wok.

Step 2

Add chicken and soy sauce.

When lightly browned, add rest of ingredients and cook for 5 minutes covered on low.

We really enjoyed this chicken -- it tastes a LOT like the pineapple chicken at our local Chinese restaurant, but was way cheaper to fix at home and actually took less time than ordering take out. I only had yellow bell peppers, so that's what I used (the green would have been prettier, to add more color, but it tasted good with the yellow), and I used fresh cut pineapple instead of canned because I had it on hand and it needed to be used. I will definitely make this again.

This has been a crazy work (and evening) type of week. I was grateful for a quick recipe. This took me about 15 minutes from start to finish. It's tasty, too! The only tweak I'd make next time is to use pineapple tidbits instead of crushed. Thank you!
