Macaroni Pie is a staple here in Trinidad and one of the first dishes I learnt to make. Eat it on it's own with ketchup and pepper or serve alongside any type of meat, veggie or bean dish which has lots of gravy. Totally delicious! I came up with this recipe when I had some caesar dressing I wanted to use up and mashed potatoes that needed sprucing up. It was a hit and I make it quite often now. I have been asked for this recipe numerous times. If gluten intolerant make sure you are using gluten free Caesar dressing.
You can use packaged coleslaw in this although I like my poppy seed slaw a little heavier on the carrot, so if I did that, I might add in an extra grated carrot or two. You can shred all your veggies in the food processor and have all this put together in less than 10 minutes. Refrigerate several hours before seving for best flavor. No mayo makes this great for picnics and outdoor potlucks.
