Step 1

Peel and cut the sweet potatoes into 1" cubes - place into a heavy pot.

Step 2

Put everything else in the pot- bring to a boil.

Step 3

Mix well , cover, and lower the heat to simmer/low - cook covered for approx 30 minutes or until the sweet potatoes are soft.

Step 4

Turn off heat and mash the potatoes- taste and add salt and pepper if desired.

I scaled this back for 3 serves though did not add the salt or the sugar for dietary reasons but the DM and I thoroughly enjoyed this with our lamb shanks, thank you natsgarden123, made for What's on the Menu tag game at Food Friends and Fun Forum.
