Ginger Baked Apples

Step 1

Preheat oven to 375ºF. Coat a casserole dish (big enough to hold 2 apples) with nonstick cooking spray.

Step 2

Peel apples halfway down from stem end. Core apples without cutting through the bottom.

Step 3

Place in casserole

Step 4

Mix ginger and butter in small bowl. Spoon half of the mixture into each apple

Step 5

Stir all remaining ingredients in small saucepan over medium heat until sugar dissolves and syrup boils

Step 6

Pour over apples.

Step 7

Bake 30-40 minutes

Step 8

NOTE: May be covered loosely with plastic wrap and done in microwave (on high about 6 minutes) and then remove plastic wrap and put apples under preheated broiler for about 2 minutes.

I made this for the it was down sized for 1...he kept saying what is that taste..but he kept eating it...and he said again...what is that taste...I finally told him it was crystallized ginger...he really enjoyed the baked apple...made for "Players Favorites" tag game...I topped it with some whipping cream and a dusting of cinnamon...

This recipe was easy peasy to put together and I love the addition of the crystallized ginger! A great desert that I didn't feel super guilty in eating. Thank you Mikekey for sharing. Made it for Pick Me Tag game.

Was gifted with lovely freshly picked large great tasting apples, your recipe had me think back my mom's baked apples one,of my favorite childhood desserts! Loved the addition of the ginger and lemon, (had to improvise and make my own crystallized ginger - on my shop list) Like all the previous reviewers have said these baked apples make for one great tasting dessert!

OMG, these are divine!!! Everything works so well together in this recipe. I served these with vanilla ice cream and we all enjoyed this sinful tasting dessert.

OMG,Mike - these are so good! I really love the creative use of the crystallized ginger - and the lemon zest and juice puts it over the top. No more boring baked apples for me! I did bake them longer than instructed, but only because I wanted them softer and more color on them. Delish!
