The mayo is the secret to this recipe it’s what locks in all the moisture in the fish, you can also use large thick salmon fillets in place of the steaks but I advise to leave the skin on for the best flavor, I prefer to use Atlantic salmon fillets but any salmon will do fine, these also may be made on the grill placed in a disposable foil pan and amounts may be doubled

This is my new favorite pasta recipe. I've made it about 10 times the last few months because it's so easy and so good. It's adapted from a grocery store recipe. It's great even without the chicken. You can add onion to this also by sauteing some in the olive oil before adding the tomatoes. Please use all fresh ingredients for the best results.

One of my favorite recipes. And, it is actually pretty easy to make. Thin pounded chicken breasts stuffed with spinach, olives, cheeses, and shallots; rolled up and served with a rich sun dried and diced tomato, and olive sauce. I like to serve this with pasta tossed with garlic and fresh herbs, salad and some roasted squash.
Macaroni Pie is a staple here in Trinidad and one of the first dishes I learnt to make. Eat it on it's own with ketchup and pepper or serve alongside any type of meat, veggie or bean dish which has lots of gravy. Totally delicious! Some people even add in some grated carrots or chopped pimentos before baking. I like mine plain with lots of black pepper.

A great way to serve up salmon any day of the week. Great with other fish too! We love all the flavors of a loaded baked potato, but not the fat/saturated fat. So I turned that into a low fat smashed (or mashed, if you like) potato side dish.
