Step by Step Method

Step 1

Combine the first 3 ingredients in a large bowl and toss.

Step 2

Cut oranges crosswise into 1/4 inch slices; cut slices in half and add to spinach mixture.

Step 3

Sprinkle with salt and pepper and drizzle orange juice over; toss gently

I made this salad using those sweet little mandarin oranges, Craisins and dried cherries along with the seeds. It was delicious and well enjoyed!

I added some toasted almonds and sliced grapes to this salad to add a little crunch and had some baked perch to go with it. Very delicious with strawberry vinaigrette!

Get In My Belly!

It doesn't have to be summer to make this salad. Downsized for 1 serving. I added shrimp, and had a lovely lunch!

I loved the salad ingredients but just using the juice from the orange for salad dressing made me feel like something was missing. Next time I will use a salad dressing or mix the orange juice with oil and put in some spices and a little sugar for added flavor.

I added some goat cheese and used cranberry salad dressing and it was a delicious choice to have with salmon. We will have this on a regular basis as we love trying new salads that we haven't had before. A keeper all the way!
