Step by Step Method

Step 1

Melt 1 tablespoon butter in sauté pan.

Step 2

Sauté apple slices until just turning soft. Set aside.

Step 3

Beat together eggs, cream (or milk), and salt & pepper until blended but not frothy.

Step 4

Melt remaining butter in an omelet pan over high heat until foam begins to recede but before beginning to color.

Step 5

Pour in egg mixture and prepare omelet, stirring lightly, but allowing it to set on the bottom.

Step 6

Fill with sautéed apples and Brie. Fold or roll and slide out of pan onto a heated plate.

I used a really tarty granny smith apple and a King Island double brie for a really great breakfast which I thoroughly enjoyed, thank you Mikekey, made for Billboard Recipe Tag Game.

This is a 5 star all the way. The apple combined with the brie gives a smooth delightful taste to the omelet. I would love this for Brunch, Lunch or dinner. Loved the recipe Thanks MikeKey 23 Oct 16 Made again this time with a wonderful cheese from Quebec -Vaudreuil Double creme Brie. It is a smooth, mild, very delicious brie. This is one of my faorite omelets.

Delicious version of an omlet. I doubled the recipe and after peeling my apple, slicing it thinly, I also chopped it the other direction. I cooked the omlet, stuffed it and this is where I became inept in flipping it. So I wound up slithering it out on to a paper plate and then I flipped it back in the pan to lightly brown it on the other side. My DH and I loved the sweet tarty flavor of the gala apple in combination with the brie and egg. Simply said, it was delightful, and will be making it many times more! Made for Billboard Tag 3-2012.
