Step by Step Method
Step 1
For Satay Sauce heat oil in a small saucepan over medium low heat and cook onion, garlic and chilli for 3 minutes and then add peanut butter, coconut milk, sweet soy sauce, brown sugar and lime juice and stir to combine and then reduce heat to low and cook, stirring for 3 to 5 minutes or until heated through.
Step 2
Meanwhile, heat a lightly oiled barbecue or chargrill over medium high heat.
Step 3
Season pork with salt and pepper and cook for 3 minutes each side or until just cooked through.
Step 4
Divide rice and pork among serving plates and top with satay sauce, cucumber, chilli and coriander.
