" This is a very tasty soup good enough to be served as a first course for company. Be sure that you puree it until it is very smooth. If you like creamy soups you may add 1/2 cup of half and half , stir in the cream just before you heat the pureed soup"

Step 1
In a large saucepan combine the onion, celery, potato, cucumber, apple and chicken stock
Step 2
Bring to a boil, reduce heat, cover and simmer for 30 minutes or until the veggies are well cooked
Step 3
Cool slightly or until you can handle it to puree in your blender or food processor. Puree until very smooth
Step 4
When you have pureed a batch return it to the saucpan. When all the batches are back in the pot stir in the curry, cayenne, garlic, season with salt and pepper.Taste, adjust seasoning
Step 5
Heat to very hot, serve, sprinkling some chives on top of each bowl
