Ingredients

The ingredients are:
  • 4 (800 grams) pork loin chops (4 chops)
  • 1 cucumber, finely chopped (Lebanese cucumber)
  • Red chilli pepper (1/2 long pepper, finely chopped)
  • Steamed jasmine rice, to serve
  • Coriander leaves to serve
  • FOR SATAY SAUCE
  • 1 teaspoon oil (peanut oil)
  • 4 ounces brown onion, finely chopped (1/2 brown onion)
  • 1 garlic clove, minced
  • Red chilli pepper (1/2 long pepper, finely chopped)
  • 140 grams peanut butter (crunchy, 1/2 cup)
  • 185 ml coconut milk (3/4 cup)
  • 1 tablespoon soy sauce (sweet)
  • 1 teaspoon brown sugar
  • 1 tablespoon lime juice

How to Make

  • Step 1: For Satay Sauce heat oil in a small saucepan over medium low heat and cook onion, garlic and chilli for 3 minutes and then add peanut butter, coconut milk, sweet soy sauce, brown sugar and lime juice and stir to combine and then reduce heat to low and cook, stirring for 3 to 5 minutes or until heated through.

  • Step 2: Meanwhile, heat a lightly oiled barbecue or chargrill over medium high heat.

  • Step 3: Season pork with salt and pepper and cook for 3 minutes each side or until just cooked through.

  • Step 4: Divide rice and pork among serving plates and top with satay sauce, cucumber, chilli and coriander.
