"This is out of my Bisquick cookbook. This was the very first Impossible Pie in the 1960's. Mix all the ingredients together, and pour into a pie plate. While it bakes, the crust is formed - easier than pie."

I've seen recipes for 'impossible' recipes for years but this is the first time that I've tried one. It was really good.....and especially simple. I probably should have cooked mine for another 3-5 minutes but it still came out good and I totally enjoyed it. Thanks for sharing, Teresa.

Okay, so I made this on the weekend and just have to write a review! This coconut pie is by far one of my favorites now. The flavor was spot on and I love that there is no crust. What is not to love!

I have made several versions of this recipe and it is a favorite. Love coconut pie, hate making crust, so this is the perfect solution. I really like this one because is isn't done in the blender, so the coconut doesn't get pulverized.
