"This is out of my Bisquick cookbook. This was the very first Impossible Pie in the 1960's. Mix all the ingredients together, and pour into a pie plate. While it bakes, the crust is formed - easier than pie."

Step 1

Heat oven to 350°F. Grease a 9-inch pie plate.

Step 2

Stir all ingredients, except whipped topping, until blended. Pour into pie plate.

Step 3

Bake 50 to 55 minutes or knife inserted in center comes out clean. Cool 5 minutes. Garnish with whipped topping if desired. Store covered in refrigerator.

I have made several versions of this recipe and it is a favorite. Love coconut pie, hate making crust, so this is the perfect solution. I really like this one because is isn't done in the blender, so the coconut doesn't get pulverized.
