Step by Step Method

Step 1

Preheat oven to 400°F.

Step 2

Bake pie crust 10 minutes. Meanwhile, in large skillet, heat olive oil over medium heat. Add shallot and saute 2 minutes or until translucent. Add ham and cook 3 minutes or until all moisture has evaporated.

Step 3

Remove crust from oven and lower temperature to 325°F. Add ham and shallot mixture to crust. In mixing bowl, combine eggs, both cheeses, 1/2 teaspoon herbes de provence, cayenne pepper, dijon mustard, heavy cream and salt. Pour into crust and bake 45 minutes or until quiche is firm.

Step 4

Garnish with remaining 1 teaspoon herbes de provence and enjoy, refrigerating any leftovers.

I like any pie type recipe that you don’t have to make your own crust. ;). I had some ham left from Easter and this was perfect. Had a hard time finding Swiss cheese so used the gruyere and some havarti.

A lovely quiche using leftover ham. I also subbed thyme for the herbs specified but otherwise made as directed. Served for a light dinner with a tossed salad and rolls. Thanks for sharing!
