I couldn't get mint at the grocery store; not even fresh basil to take it's place. I used some parsley and some dried basil instead. The flavors all went well together. I did add some extra sugar to my portion to cut the heat a little. Nothing overpowered anything else. I made this for The AmaZing Race game in the forums.

Sum is greater than its parts. Sounds really good, but tastes even better. The only thing I planned to change was to make it less sweet for our tastes (1/4 teaspoon for 1/2 a recipe), but DH was in charge of cucumbers and put in about double what the recipe called for - not to worry though, it tasted wonderful and you could still taste the flavor of each individual ingredient (I just squeezed a little extra lime over it). We put half of this on our fish, and the other half over brown rice and it made a nice complement to both of them.

Amazing salsa! I made this with cucumbers, mint and garlic from my garden, along with garlic chili oil I had made earlier this year. We just wanted to eat it like a salad, it is so good! The balance of flavours is perfect! I made the whole recipe for just the two of us, knowing that it would be eaten with gusto! Thank you for sharing Mike! Made for Billboard Recipe Tag.
