Step by Step Method

Step 1

Heat up a skillet over medium heat. Place some butter in the skillet.

Step 2

Combine the butter, garlic, and parsley in a small bowl. Smear it on the 4 slices of bread. Smear it on both sides of the bread.

Step 3

Take the leftover spaghetti and put it on two slices of the bread. Place cheddar and parmesan cheese on top of the spaghetti. Place the other bread on top, making two sandwiches.

Step 4

Put the sandwiches in the heated pan and reduce heat to medium low. Cook the sandwiches for approximately 3 minutes on each side. Let the cheese melt. Try not to over cook the bread. Cook it to a golden brown color. Before serving, garnish each sandwich with red pepper and parsley, if desired.

I don't know why I didn't think of doing this myself! It was a great use of left-over spaghetti. I used mozzarella and Parmesan cheese. My kids both ate their whole sandwich and asked me if I would make this again sometime. And guess what? All of the leftover spaghetti is out of the refrigerator! A winner of a recipe, all the way around. Made for For Your Consideration Tag Game.

This recipe intrigued me. I've never heard of a spaghetti sandwich before so was anxious to give it a try. I really enjoyed it. I added lots of garlic powder to the buttered bread before I grilled the sandwich. It tasted like spaghetti with garlic bread in every bite. Thanks for sharing this tasty and fun recipe, Diana.
