Step by Step Method

Step 1

Place ricotta into a bowl and add finely chopped dill and mix well.

Step 2

Slice cucumber into thin sticks (approximately 10cm length x 5mm thickness).

Step 3

Place slices of salmon onto a clean work bench and add 2 cucumber sticks, a tablespoon of ricotta mix and rocket leaves onto each slice

Step 4

Roll each slice into a neat parcel.

Step 5

Season with salt and freshly ground black pepper and serve.

Step 6

Spritz and garnish with lemon wedges.

I really enjoyed the flavor combination (I used basil instead of rocket, and dried dill). My only issue is that the rolls were too big and too messy for my taste. I think I would like it better with a cube of cucumber, tsp of cheese and just enough salmon to roll it up. If I was serving as an appie, I would also spear them with toothpicks.

Very good combination of flavors. Loved the dill and cucumber, and the arugula is nice and unexpected. I bet either cream cheese or goat cheese would make a great sub in this too.
