Step 1: Place ricotta into a bowl and add finely chopped dill and mix well.
Step 2: Slice cucumber into thin sticks (approximately 10cm length x 5mm thickness).
Step 3: Place slices of salmon onto a clean work bench and add 2 cucumber sticks, a tablespoon of ricotta mix and rocket leaves onto each slice
Step 4: Roll each slice into a neat parcel.
Step 5: Season with salt and freshly ground black pepper and serve.
Step 6: Spritz and garnish with lemon wedges.
