Step by Step Method

Step 1

Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring, until beginning to soften, about 1 minute.

Step 2

Add garlic, red pepper flakes and salt. Cook, stirring, until fragrant, about 30 seconds more.

Step 3

Add spinach and cook, stirring, until just wilted, about 2 minutes. Remove from heat; stir in bacon and sprinkle cheese on top.

Step 4

Serve hot.

Very nice and goes alongside anything pretty well. I increased the garlic by a touch and in addition to the spinach I added a bit of watercress that I had laying around in the refrigerator. Used the blue cheese, but next time will use a milder cheese. Will be bringing it to work tomorrow for a light enjoyable lunch. Thank you KUW for sharing.

Seriously one of the best ways I have ever had spinach. I loved all the flavors going on here. Definitely I will make it many more times. My hubby and I loved it! I used Gorgonzola, which was on the mild side so it didn't mask all the other flavors. Deeelicious!
