  • 1/2 cup thinly sliced red onion
  • 2 cloves garlic (minced)
  • Pinch red pepper flakes
  • 1/8 teaspoon salt
  • 1 bag (10 ounce) fresh spinach (mature spinach, tough stems removed)
  • 2 ounces bacon (2 slices, center-cut bacon, cooked and crumbled)
  • 1 tablespoon crumbled blue cheese

How to Make

  • Step 1: Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring, until beginning to soften, about 1 minute.

  • Step 2: Add garlic, red pepper flakes and salt. Cook, stirring, until fragrant, about 30 seconds more.

  • Step 3: Add spinach and cook, stirring, until just wilted, about 2 minutes. Remove from heat; stir in bacon and sprinkle cheese on top.

  • Step 4: Serve hot.
