Portuguese Chicken With Corn & Potatoes

Step 1

Cut potatoes in half and place on an oven tray and drizzle with 1 tablespoon olive oil and season with salt and pepper.

Step 2

Coat chicken in seasoning and place in an oiled roasting pan.

Step 3

Cook potatoes and chicken in a hot oven (200C) for 35 minutes.

Step 4

Chop capsicum and add to chicken and cook for a further 10 minutes or until chicken is cooked through and potatoes are golden.

Step 5

Cook four corn cobbettes according to packet directions and then drain and serve with chicken and potatoes.

Excellent meal! We LOVED this and I really appreciated how easy it was to throw together. I love recipes like this. I did a search and found an easy Portuguese spice mix to make (garlic powder, salt, paprika, cumin, etc..) then used it on the chicken. It had excellent flavor and the potatoes were roasted perfectly. I used fresh corn on the cob - boiled like I usually do. Love, love, love. Thank you!
