Ingredients

The ingredients are:
  • 600 grams potatoes (small baby potatoes)
  • 1 kilogram chicken drumsticks (8 drumsticks)
  • 2 tablespoons chicken seasoning (Portuguese chicken seasoning specified)
  • 1 red capsicum, large
  • 1 kilogram corn (corn on the cobfrozen mini corn cobs 1 packet)

How to Make

  • Step 1: Cut potatoes in half and place on an oven tray and drizzle with 1 tablespoon olive oil and season with salt and pepper.

  • Step 2: Coat chicken in seasoning and place in an oiled roasting pan.

  • Step 3: Cook potatoes and chicken in a hot oven (200C) for 35 minutes.

  • Step 4: Chop capsicum and add to chicken and cook for a further 10 minutes or until chicken is cooked through and potatoes are golden.

  • Step 5: Cook four corn cobbettes according to packet directions and then drain and serve with chicken and potatoes.
