Step 1: Cut potatoes in half and place on an oven tray and drizzle with 1 tablespoon olive oil and season with salt and pepper.
Step 2: Coat chicken in seasoning and place in an oiled roasting pan.
Step 3: Cook potatoes and chicken in a hot oven (200C) for 35 minutes.
Step 4: Chop capsicum and add to chicken and cook for a further 10 minutes or until chicken is cooked through and potatoes are golden.
Step 5: Cook four corn cobbettes according to packet directions and then drain and serve with chicken and potatoes.
