Step by Step Method

Step 1

Preheat broiler to low (400°F)

Step 2

Coat a small roasting pan with cooking spray.

Step 3

In a small bowl, whisk together oil, lemon juice, parsley and garlic powder. Brush over salmon fillets.

Step 4

In a shallow bowl or on a piece of waxed paper, spread Parmesan cheese. Dredge fish in cheese and place in the prepared pan.

Step 5

Broil about 6-8 inches from heat source for 6 minutes per side, until golden brown and flakes easily.

Very easy, quick to the table and very flavorfull! My crew gobbled it up. We had salad and asparagus as sides. Make sure you don't overcook the salmon. Pink in the middle assures tender and flaky fish.
