Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • Lemon juice (of 1/2 lemon)
  • 1 tablespoon parsley, chopped (fresh)
  • 1 1/2 teaspoons garlic powder
  • 3 pounds salmon fillets (6 fillets, 8 ounces each)
  • 3/4 cups Parmesan cheese, grated (about 2 ounces)

How to Make

  • Step 1: Preheat broiler to low (400°F)

  • Step 2: Coat a small roasting pan with cooking spray.

  • Step 3: In a small bowl, whisk together oil, lemon juice, parsley and garlic powder. Brush over salmon fillets.

  • Step 4: In a shallow bowl or on a piece of waxed paper, spread Parmesan cheese. Dredge fish in cheese and place in the prepared pan.

  • Step 5: Broil about 6-8 inches from heat source for 6 minutes per side, until golden brown and flakes easily.
