"I have made and enjoyed many a cheesecake but come holidays and special occasions at our house this family favourite is a given. Being freezer friendly it also makes for a great make ahead. When it comes to recipe requests for the most part it comes as a surprise that it's a no bake."

Step by Step Method

Step 1

In a large bowl mix the wafer crumbs and melted butter, press into a 9 or 10 inch springform pan (I like using the 10 inch use the 9 inch when wanting thicker slices, I like to bake my wafer crusts for 5 minutes in a pre heated 350 oven, cool before filling

Step 2

For those who prefer to have their slices without the cherry topping save 1/4 cup of crumbs to sprinkle on top of the cheesecake and serve the cherries on the side.

Step 3

Mix cream cheese, vanilla and sugar using a hand mixer whip until smooth

Step 4

Whip cream add in 3 – 4 tablespoons sugar, add to cream cheese mix, whip until smooth and creamy pour into chilled wafer crust

Step 5

Refrigerate

Step 6

Top with cherries just before serving

This cheesecake recipe is easy and soooo delicious! Our family and dinner guests all gave it high reviews! I did bake the crust for 5 minutes and whipped the cream ahead of time. The filling is lovely and creamy. Used a low sugar cherry pie filling and the tartness of the cherries was a perfect foil for the sweet filling. This is going into my Favvy File for sure. Thank you Gerry for another keeper! Made for Billboard Recipe Tag.
